Sometimes if I'm looking for a smoother more dip-like consistency I add half a small tub of plain/natural/greek yoghurt or even sour cream. Its perfect for dipping crudités and pitta strips in.

Serves: 4 persons
Ingredients
- 3 ripe avocado skinned and stoned
- 11/2 limes, zest and juice
- 11/2 tomatoes
- ¾ red onion, peeled
- large handful fresh coriander
- 10 drops Tabasco
- Malden sea salt and freshly ground black pepper to taste
Instructions
- Place all ingredients in food processor and blend briefly till you have a coarse mixture
- Alternatively if doing by hand:-
- mash avocados with back of a fork
- Chop tomatoes, onions and coriander finely
- Combine all ingredients
