Dill Potatoes

These lovely potatoes are a cheats roast potato! No peeling or pre-cooking involved and a lot less fat. They go great with any fish dishes and are equally good with any herb of your liking, try them roasted with thyme and served with red meat.
Ingredients
  • 50g coconut oil (approx 4 tablespoons)
  • 800g charlotte/fingerling potatoes, peeled, boiled and cold
  • 4 tablespoons dill, chopped
  • 2 tsp Sea Salt
Instructions
  1. Preheat the oven to 425F/220C
  2. Spoon the coconut oil into a large baking tray and place in the oven for 1 minute, or until the oil has melted
  3. Carefully pace the potatoes into the tray rolling around to cover each potato in the oil
  4. Roast for 40-45 mins until the potatoes are golden brown and crispy
  5. Turn out into a serving dish sprinkle liberally with the chopped dill and sea salt
  6. Serve at once
