Sometimes if I'm looking for a smoother more dip-like consistency I add half a small tub of plain/natural/greek yoghurt or even sour cream. Its perfect for dipping crudités and pitta strips in.
  • 3 ripe avocado skinned and stoned
  • 11/2 limes, zest and juice
  • 11/2 tomatoes
  • ¾ red onion, peeled
  • large handful fresh coriander
  • 10 drops Tabasco
  • Malden sea salt and freshly ground black pepper to taste
  1. Place all ingredients in food processor and blend briefly till you have a coarse mixture
  2. Alternatively if doing by hand:-
  3. mash avocados with back of a fork
  4. Chop tomatoes, onions and coriander finely
  5. Combine all ingredients
