Serves: 15 gingerbread
Ingredients
- 350g (12oz) wholemeal spelt flour
- 4 tsp ground ginger
- 1tsp bicarbonate of soda
- 125g (4½oz) butter, diced
- 150g (5½oz) xylitol
- 2tbsp maple syrup
- 2tbsp organic honey
- 1 egg, beaten
- Currants and icing, for decoration
Instructions
- Preheat the oven to 180C (350F/Gas 4)
- Line 2 large baking trays with baking parchment
- Place the flour, ginger, and bicarbonate of soda in a large bowl
- Stir the ingredients with a wooden spoon until they are thoroughly mixed
- Rub the butter into the mixture using your fingertips
- Continue rubbing in the butter until the mixture resembles fine breadcrumbs
- Stir in the xylitol
- Stir in the maple syrup, organic honey and the egg until the mixture starts to come together in a dough.
- Next, tip the dough mixture out onto a lightly floured surface and knead it until smooth
- Roll out the dough on a lightly floured surface to a thickness of 8/10mm (1/4to1/2 in), then using your cutters, cut out the shapes
- Re-roll the leftover enough and cut out more biscuits until it's all used
- Place the biscuits on the baking trays and bake in the preheated oven for 9-10 minutes or until golden brown
- Allow the biscuits to cool on the trays
- Decorate with currants and icing
