Banana Walnut Coffee Loaf Cake

  • 80g (3oz) butter at room temperature
  • 110g (4oz) maple syrup/honey or 55g (2oz) of each
  • 1 egg beaten
  • 75ml v.strong coffee
  • 110g (4oz) wholemeal spelt flour (sifted)
  • 110g (4oz) ground almonds
  • 2 level teaspoons baking powder
  • 25g chai seeds
  • 3 large ripe bananas mashed
  • 55g (2oz) chopped walnuts
  1. Preheat oven to 350F (177C)
  2. Cream butter and maple syrup/honey together in a large mixing bowl
  3. Now beat in the eggs and coffee
  4. Fold in the flour, ground almonds, baking powder & chai seeds
  5. Carefully mix in the mashed banana and walnuts
  6. Pour into a lined medium sized loaf tin (approx 22cm x 12cm)
  7. Bake for 50 mins - 1hr
  8. Allow to cool on a cooling rack before serving
